INGREDIENTS:
1/4 Cup Unsalted Butter
2 Lbs Mushrooms, Sliced
1 Pinch Salt
1 Yellow Onion, Diced
1 1/2 TBSP Flour
Fresh Thyme
2 Cloves Garlic, Minced
4 Cups Chicken Broth
1 Cup Water
1 Cup Heavy Cream
Salt & Pepper to Taste

INSTRUCTIONS:
Melt butter in a pot over medium heat.
Cook mushrooms in pot with a pinch of salt for about 15 minutes.
Set some mushrooms aside to use later for garnish.
Mix onion into mushroom and cook until onions are soft and translucent.
Stir in flour and cook a few more minutes & add in a few sprigs of thyme and garlic.
Pour in chicken stock and water then bring to a simmer and cook for about an hour.
Remove thyme and use immersion blender to blend soup until creamy.
Add cream and season with salt and pepper and mix together
Serve and garnish with a few mushroom pieces.
