INGREDIENTS:
3 TBSP Butter
1 Large Onion
1-2 Stocks Celery
1-2 Large Carrots
2 Russet Potatoes
1 Butternut Squash
2 Cups Chicken Stock
Salt & Pepper
OPTIONAL INGREDIENTS:
Heavy Cream
Zucchini / Yellow Squash
Sour Cream
INSTRUCTIONS:
Start by roasting the butternut squash. Slice it in half, remove the seeds & put it on a baking sheet. Then lightly coat it in olive oil. Roast for approx 45 minutes at 350º until tender.
Remove from oven, let cool, peel the skin & slice into cubes.
Chop the other vegetables and set aside (its ok if you make large cuts)
Melt the butter in a large pot and cook the vegetables for about 5 minutes until lightly browned.
Add chicken stock and cover and let cook for an hour until the veggies are tender (if needed, you can add a little more water or chicken stock)
Use your immersion blender to blend all the tender vegetables until creamy & smooth, then season to taste.
If you like, add in 1/2 cup - 1 cup of heavy cream, stir & serve.
